Easy Protein Bread Recipe from the Scarsdale Diet Program

If you have committed to the Scarsdale Diet programs, you have found that protein bread is an important part of the diet regimen. Many who are following the weight loss method of the Scarsdale Diet program can’t find protein bread at their local supermarket or are paying high prices at gourmet stores for bread. Here’s a simple (but exceptionally good tasting) recipe for the bread.

Scarsdale Diet Program Protein Bread

Ingredients:

A cup of warm water

One tablespoon of dry yeast

½ teaspoon of salt

a teaspoon of sugar

½ teaspoon apple cider vinegar

½ cup soy flour

¼ cup gluten flour (gluten flour has much lower carbs than regular flour. You can substitute high-gluten bread flour if you can’t find gluten flour.)

1 ½ cups of whole wheat flour.

Place the water in a medium mixing bowl. Sprinkle dry yeast into a bowl and let sit until yeast dissolves (five minutes or so). Add salt, sugar, and vinegar to the bowl. Mix well.

Sift the soy and gluten flours together. Slowly add to yeast mixture in bowl.

Sift the whole wheat flour and add it to the mixture in a bowl. Turn the mixture slowly until the dough sticks (and not to the sides of the bowl). If you have a mixer or food processor that has dough hooks, these help tremendously with mixing.

Lightly flour a board or other surface. Scoop dough into a ball with floured hands and place on surface. Knead for five minutes until the dough is smooth and elastic.

Place in a small loaf pan that has been sprayed with nonstick spray. Adjust the dough to fit the shape of the pan (loaf shape). Do not try to touch the dough to the sides of the pan. Cover with a slightly damp towel and leave in a warm (draught-free) place to rise. Let rise for two to three hours until the dough has at least doubled in size and reaches the top of the loaf pan.

Preheat oven to 325 degrees.

Bake bread in preheated oven for one hour or until lightly browned.

Scarsdale diet program bread will be much denser than regular bread. Cut into thin slices. Keep unused portion in refrigerator.

To keep your Scarsdale diet program loaf longer (or if you want to make multiple loaves ahead of time); you can double wrap the loaves in plastic (after thinly slicing them); and store them in the freezer. If making your own bread is not for you; you can find some inexpensive options at the grocery store. You should look for low fat/carb options that are whole grain bread (never white). You will lose more weight with bread on the Scarsdale Diet program if you choose a bread that has more than 4 grams of protein and less than 12 grams of carbohydrates.
